The sun is setting on Sunday evening, and you’ve spent the day lounging at the Custom Hotel’s pool or sipping mojitos at the bar watching that day’s big game on TV. You’re hungry. What to do? Head into Bistrotek, the Custom Hotel’s eatery, for a delicious, healthful meal … and one of best desserts you’ll ever eat in your life.

Let’s start with the desserts, shall we? First, a grilled cheese sandwich, but wait, inside is mascarpone cheese and Nutella. Simply stupendous does not describe this morsel of goodness.

It didn’t stop there: Next, we devoured three mini, cinnamon sugar-sprinkled doughnuts with coffee ice cream. Two of my most favorite things on this planet!

The rest of Bistrotek’s food is awesome, too. For starters, the Fried Green Tomatoes with mozzarella and basil are tasty, as was the Tuna Tartare with avocado and lime, complete with a little spicy kick. Lucky for us, Chef Paul Arias had just whipped up a new Soup of the Day for dinner: a non-cream based, powered by potato puree.

The most splendid part of the food preparation at Bistrotek is that it’s fresh and hearty, simple yet flavorful. The menu changes seasonally and is packed with comfort foods like Spaghetti Marinara with meatballs and Three Cheese Ravioli with bacon, as well as lighter fare like Pan Seared Salmon and Grilled Mahi Mahi with white beans and kale. For meat lovers, fuel up on the Bistro Burger (Smoked Gouda with crispy pancetta) or make your own Custom Burger.

Though the restaurant is attached to the Custom Hotel and follows their hip and modern vibe, Bistrotek also feels like its own entity, if you’re not in the mood to be mistaken for an out-of-towner.
